About the Coffee
Gerardo Calvo, Zaira Marín and William Méndez. Three close friends who planted coffee together over thirty years ago on their own farm Finca Frailes. Since then, they stick to a regular renovation plan to maintain the farm’s health and productivity.
The cherries for this coffee are brought from Finca Frailes to the Palmichal micro-mill by truck. Cherries are visually sorted and then floated to remove any unripe cherries. The leftover ripe cherries are then processed in an anaerobic natural way. The cherries are sealed in containers and fermented without oxygen (anaerobic). After this fermentation process, the cherry is sundried on raised beds to give it a natural process finish.
Palmichal micro-mill plays an important role for many specialty coffee producers in the Palmichal, Puriscal, Tarrazú and Frailes micro-regions. It is located in Palmichal, Costa Rica, and began in the 2015-2016 harvest with 30 farmers participating in delivering their cherries to be processed by this new mill. The mill has patios and elevated beds to enable various kinds of drying methods. It is able to process coffees as fully washed and a variety of naturals and honeys.
The mill’s nursery has over 330,000 plants and counting, making it one of the largest coffee nurseries in the county. The Palmichal nursery sells the plants to producers at cost to make it easier for farmers to renovate their rootstock. It also gives farmers the opportunity to finance against their future crops.
The mill strives to serve farmers who grow unique coffee and work with quality-conscious importers & micro-roasters. Cherries are processed using meticulous quality-focused processing techniques. Their small-scale, artisanal model allows Palmichal micro-mill to match coffees from smallholder farmers to roasters with specific quality and process requirements, all while maintaining economic and physical traceability. The farmer thus has more insight to where their coffee is going and knows better that their hard work is going to be treated with the love and care it needs.
