About the Process

Mustefa Abakeno is a smallholder with 18 hectares of land near Agaro in the Jimma Zone of Western Ethiopia. In 2020, Mustefa acquired a second washing station, Kabira, to receive cherries from local producers in the surrounding area. This washing station has more space as opposed to Mustefa’s first washing station, Beshasha, hence Kabira is mostly used for drying natural processed coffees on raised beds. However, this Kabira coffee has been washed. Mustefa uses his small disc pulper to depulp the cherries. Due to lack of water in the region, the coffee is left to ferment for roughly 8 hours after depulping, before being dried for 13 to 16 days on raised beds. This process resembles that of a light honey.

Floral & spiced delicacy

We are excited to receive coffee from Mustefa again, who also produced the Kabira lots 1 to 4 we released a year ago. Expect a clean coffee with floral notes of rosehip, spiced notes of black pepper, a fudgy chocolate body and a slight lemon freshness. Indulge in this delicate washed Ethiopia.
