Moccamaster

A household name in The Netherlands, the MoccaMaster is a fantastic automatic coffee brewer for your home or office kitchen.

Capable of brewing over a litre of coffee in around six minutes, it's a wonderfully consistent, incredibly easy way of preparing your daily filter.

The following recipe will produce just over a litre of coffee.

THE NECESSITIES 

• 75g fresh, whole bean coffee from Sprout

• Soft, clean water

• MoccaMaster Auto Brewer

Comandante or Rhino coffee grinder

• Stirrer

• Scales and timer

STEP 1

Add a filter paper to the brew basket and rinse under a tap. This helps to get rid of any papery taste from the final coffee, which is especially noticeable if it's going to be drunk black. 

STEP 2

Weigh out and grind your coffee, aiming for a coarse, granular consistency, and add to the brew basket.

STEP 3

Add 1.25L of water to the reservoir, using the printed lines as a guide.

STEP 4

Make sure your clean coffee pot is in position so that the brewer will function and drain properly.

Flick the switch to turn on the brewer and after a few seconds hot water should begin to gently spread over the ground coffee bed.

STEP 5

After roughly a minute the brewing water should have covered the grounds. To ensure they are evenly wet it's useful to give it a little stir, so that any grounds that float up to the top are mixed in.

Busy yourself with another task for a few minutes. 

STEP 6

After about five minutes, your coffee should be ready.

If the brew water is running up and over the filter paper then you need a coarser grind next time.

STEP 7

You can place the spent coffee and filter paper from the brew basket into the compost bin without worrying

about drips. 

Enjoy within an hour of being brewed, or keep it in a thermos.
