About this Coffee
Sul de Minas is situated in Brazil’s Minas Gerais state, known for its high altitudes and ideal climate for producing smooth, well-balanced coffees. Coffee production in this region dates back to the 18th century, when Portuguese settlers first introduced coffee plantations, transforming the area into one of the largest and most respected coffee-growing regions in the world. This coffee is a regional blend from 2 farms in the area Fazenda Mutuca and Fazenda Varjao. The Coffee is a natural process where traditionally coffee cherry is mechanically harvested and then sorted for ripeness at the wet mill. From here the coffee is then taken to patios to dry for between 7-10 days depending on the weather. This lot has been decaffeinated using sparking water decaffeination (CO2 Decaf); a natural and organically certified process.
